Pinned it, Did it: Caprese Bites

I'm sort of a Bruschetta freak. I don't know if it is from living in Italy for a Summer or if there is just something about the fresh basil, tomato, mozzerella and balsamic vinegar combo. I loved the idea that is on Pinterest, to basically make a breadless version of Bruschetta, and call them Caprese Bites, similar to a Caprese Salad.

There are a plethora of recipes and presentation ideas on Pinterest. Here is the link to the Pinterest page when I searched for "Caprese Bites".

And my version:

I didn't use any fancy toothpicks or skewers...just plain old toothpicks. Of course, on the day that I needed to make them I couldn't find a wide variety of tomatoes or even grape tomatoes, nor could I find the mozzerella balls that I ALWAYS see on my shopping trips. So, I improvised, assuming that all would turn out fine anyway.
And it did.
They were delish and a HUGE hit with the hubs and my 11 year old daughter, who picked up a toothpick and loved making these with me.
